Well, hello there! Yay! Less than a year since the last blog post! HUZZAH. Once again, I don't have any burning things to discuss here on the interwebs. I haven't even told my therapist about you. And I'm pretty sure all the views on my blog are views I have viewed of myself viewing. View. What a weird word.
At any rate, I thought I would post another recipe-like thing for you, O interweb! The past couple of days I have been making Italian-style pressed sandwiches and it's like love and joy and food in your mouth all at once. As you can imagine, the man-bot has thoroughly enjoyed them, and I always feel gratified when the man-bot is grateful! :) I don't have any pictures this time, so you will have to imagine how beautiful and delicious they are!
I made a cream cheese-aioli style sauce and used baby arugula, turkey and salami...so much delicious...
(makes two sandwiches)
For the aioli:
One garlic clove, crushed into a paste-like substance
1 Tbsp white balsamic vinegar
1 Tbsp mayo
2 Tbsp cream cheese
pepper, paprika and salt to taste
Method:
Crush up the garlic clove with the back of your knife and put it in a small bowl, pour the vinegar on top and let that sit while you gather the ingredients for the sandwich:
2 ciabatta rolls (or four slices of other italian bread)
6 slices salami
4 slices deli turkey (I highly recommend going to the deli counter for your lunchmeat, it is WAY fresher and WAY tastier!)
4 bunches of baby arugula
a sprinkle of parmesean cheese (grated or otherwise)
Whisk the mayo, cream cheese and seasonings in the small bowl and slice the bread roll and spread your delicious spread on both sides of each roll and on the bottom half, layer one handful of arugula, then a slice of salami, a slice of turkey, a slice of salami, a slice of turkey and then the last slice of salami, the second handful of baby arugula and sprinkle some parmesean on the arugula and cap it with the top half of the roll. Now wrap your sandwiches in saran wrap pretty tightly and then put them in the fridge under something heavy. I put mine under a smallish cutting board and then put some heavy pans on that, so as to spread out the weight. Leave them over night and they will be ever so yummy for lunch the next day! Woo hoo! I had mine with a side of raw broccoli, which was DElicious!!

Oh... hey... RIGHT.
Oh HEY there! I guess it's been a long enough time since my one and only post that I'm about due for another one!
So I thought I would start out my second post with a real recipe! Kind of... I don't usually use a recipe. I love cookbooks and reading cooking blogs and OMGFOODGAWKERHOLYWHAT!! Best. Website. Ever. BEEEEEEEEEEEEEESSSSSSSSSSSST. Aaaaaaaaaanywhoozle, I like to peruse recipes for ideas and then take them and twist them to my tastes and ideas. That's right. I AM that cool. The point is, I just tend to throw things together and hope they come out right! I'm going to say it works about 85% of the time. :)
Tonight it definitely worked out!
To make this corn chowder, I started with one and a half large russet potatoes and tossed them in my Le Creuset cast iron Dutch oven with some hot olive oil. Next I seasoned them up with salt, pepper, paprika, chili powder, and garlic powder. I added to all THAT a whole head of cauliflower. To liven things up I poured on some rose wine and brought that to a boil, let all that hang out a bit in the pot then added about a quart of chicken stock. I covered the soup up and let it boil for a good long while, maybe 30 minutes? Next I added about a package and a half of sweet corn, let them warm up then took it all off the heat so I could blend it up with my immersion blender! Now, if you don't have an immersion blender, GO GET ONE RIGHT NOW. They are only like, $20. GO NOW. So! I immersion-blended the soup as it was, added some milk, some sour cream and a little more sweet corn and VOILA! Corn chowder!

No. 1
Here we go! My first ever blog! Brace yourself, I have a tendency to overuse ellipses and exclamation points!

Well the idea behind this is to help me learn how to write better and to get my all important opinion and viewpoint out there... You know, THERE in that big void of internet space that needs filling with my ideas, dreams and FEELINGS. I have no prior experience with this other than a few myspace blogs about how I hate people and how depressed I was. Ew. Nobody wants to read that. Not even me! Perhaps especially not me!
My general idea for how I want this whole blogging thing to go is that I want to chronicle my adventures into not being a picky eater. I recently decided that I wanted to cook better, and I wanted to write about how that made me feel. How cooking can just relax you, calm you down and make everything clearer. I mean, if you can throw a whole bunch of things in a pan and know that for once, this thing is going to come out right, that is a huge deal. If nothing else is going right at least you can make something good to eat. How comforting is that??? For me it is the most comforting thing in the world.
The only problem with that is as you can see, I don't eat green things. I would rather give you a list of things that I DO eat than what I DON'T. I would just be simpler. Not to mention shorter!
Saying that I don't eat green things is maybe a slight exaggeration. I do eat things that are green like artichokes and lettuce, but until a couple of years ago, it was very very true. I did not like vegetables. I was a carbohydrate girl! I still am, I love bread. LOVE. But I've been starting to branch out. I still don't like onions, but I will eat soups or sauces that have them cooked in. I am more willing to try new things and I haven't had too many bad experiences. I usually like what I eat. Now I just have to merge the cooking with the eating adventuresomeness.
Not only am I a pretty inexperienced cook with a very small range of dishes in my repertoir, I am still pretty squeemish when it comes to raw meat. It really grosses me out. Like, a lot. Also, I'm living with my husband and 4 other roommates and the kitchen is a complete mess all the time. All the time. So it doesn't feel safe to have raw meat in that space. I just don't want meaty dishes that have been raw meatified to be in the kitchen, just hanging out in the incredibly full sink. So my cooking has been very minimal. I also don't really know how to cook. I'm good at faking it with my own recipes.
Secret: use lots of butter and garlic!
So we'll be on an adventure together! I'm looking forward to sharing with you all my failures and successes! Next time, I will tell you a little more about myself and where I'm at and what's up.
